1. Whisk all the ingredients together until well combined.
  2. Heat the coconut oil in a frying pan and cook in batches for 2-3 minutes either side or until golden brown
  3. Serve with your favourite toppings.

Note: This recipe doesn’t have any sweetener in it because I already find the coconut sweet enough and when you add some berries, it’s all I need. However, if you are new to quitting sugar and your tastes buds haven’t fully adapted, I recommend serving them with a drizzle of rice malt syrup. This sweetener contains no fructose, so it is liver friendly!
