Hot Cross Bun Pancakes

Such a fantastic way to be able to have the taste of Easer in a very simple breakfast pancake!

Serves 1
  • 2 eggs
  • 1/4 cup coconut flour
  • 1/2 cup coconut milk
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1/2 the zest of an orange
  • Serving suggestions:
  • Coconut yoghurt
  • Cinnamon
  • MY Health Chocolate  eggs (crumble one over or just make the chocolate mix, and drizzle it over the stack)
  • Fresh or fermented berries
  1. Whisk all the ingredients together until well combined.
  2. Heat the coconut oil in a frying pan and cook in batches for 2-3 minutes either side or until golden brown
  3. Serve with your favourite toppings

Note: This recipe doesn’t have any sweetener in it because I already find the coconut sweet enough and when you add some berries, it’s all I need. However, if you are new to quitting sugar and your taste buds haven’t fully adapted, I recommend serving them with a drizzle of rice malt syrup. This sweetener contains no fructose, so it is liver friendly.
