1. In a double boiler, steam the cauliflower florets until soft and set aside.
  2. Combine all the ingredients for the balls in a bowl except for the coconut oil and mix together with your hands until well combined. Form mixture into small golf ball size bits and set aside on tray ready to cook.
  3. Preheat the oven to 200c and roast your choice of veggies to go along side.
  4. Heat the coconut oil in a large frypan and brown each of the balls. Once browned, place onto an oven tray and bake for 10 minutes to cook through. (or you can fully cook them on the fry pan if you don’t have many to do)
  5. While balls are cooking, make you cauliflower hummus by combining all the ingredients in a small handheld blender until well combined. Fix to taste.
  6. Peel your cucumbers to form ribbons (or slice thinly) ready to serve. Steam any greens now too. Once the balls are finished cooking, serve with hummus, cucumber and roasted/steamed veggies
