1. Sautee the onion, coconut oil and garlic until fragrant. Add the zucchini, mushrooms and half the broth and cook for 5 minutes. Add the remaining broth, beans, kale, coconut milk and spices and simmer for 4 minutes
  2. Meanwhile, blitz the broccoli into broccoli rice and cook in the microwave in a glass or ceramic dish for 1-2 minutes, until cooked
  3. Serve the curry with the broccoli rice and season well.

NB: You can totally add in some roasted chicken to be fast, or just cook some chicken before hand and add at the end!
