1. Preheat the oven to 180c. Chop all veggies and lay on a baking tray. Drizzle with oil, lemon juice, garlic and oregano and toss to combine. Season with salt and pepper. Bake for 25 minutes or until vegetables are just cooked. 

  2. Meanwhile, combine all the meatball ingredients in a bowl and mix well with your hands. 

  3. Once vegetables are just cooked (especially pumpkin), remove the tray from the oven.  One by one mould the mince mixture into golf-sized balls using your hands and place on top of vegetables. Return to oven to cook for another 15 minutes. Serve with steamed greens.
