Hot Cross Bun Pancakes
April 10, 2017 | Cooking time: 10 minutes
Such a fantastic way to be able to have the taste of Easer in a very simple breakfast pancake!
1/4 cup coconut flour
1/2 cup coconut milk
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1/2 the zest of an orange
- Whisk all the ingredients together until well combined.
- Heat the coconut oil in a frying pan and cook in batches for 2-3 minutes either side or until golden brown
- Serve with your favourite toppings.
Note: This recipe doesn’t have any sweetener in it because I already find the coconut sweet enough and when you add some berries, it’s all I need. However, if you are new to quitting sugar and your tastes buds haven’t fully adapted, I recommend serving them with a drizzle of rice malt syrup. This sweetener contains no fructose, so it is liver friendly!
