Another delicious way to include veggies, fats and protein to your tummy first thing of the day! A delicious warming breakfast to sit down to that your waistline and brain will love!
1 Tbsp coconut oil
1/2 head of broccoli
1/2 zucchini, cut into 5mm discs
A handful of snowpeas, ends removed
A handful of green beans, ends removed
2 stalks of kale, leaves removed
2 organic eggs
Alfalfa sprouts to serve
Lemon wedge to serve
1/2 an avocado to serve
Salt and pepper
- Heat the coconut oil in a medium fry pan and add the zucchini and broccoli. Cook for 2 minutes. Add the green beans and snow peas and cook for 10 minutes or until just tender.
- Add kale and cook for 2 minutes or until just wilted. Turn the heat down very low and crack eggs into the pan. Cover and cook for 10 minutes or until egg whites are just cooked – don’t overcook the yolk or you’ll ruin the nutrients!
- Serve with alfalfa sprouts, lemon and avocado and sprinkle with sea salt and pepper
