1. Heat the coconut oil in a medium fry pan and add the zucchini and broccoli. Cook for 2 minutes. Add the green beans and snow peas and cook for 10 minutes or until just tender.
  2. Add kale and cook for 2 minutes or until just wilted. Turn the heat down very low and crack eggs into the pan. Cover and cook for 10 minutes or until egg whites are just cooked – don’t overcook the yolk or you’ll ruin the nutrients!
  3. Serve with alfalfa sprouts, lemon and avocado and sprinkle with sea salt and pepper
