Whoever said you couldn’t have healthy pancakes?!
1/4 cup coconut milk
2 tbsp coconut oil, melted
1/4 cup coconut flour
1/4 teaspoon baking powder
- In a bowl whisk eggs, milk and oil until combined, In a separate bowl, mix coconut flour and baking powder. Add dry ingredients to wet ingredients and whisk until well combined and there are no lumps.
- Melt coconut oil in a frying pan and add spoonfuls of the mix to the pan. Cook for 3-4 minutes on each side over medium heat, then flip.
- Serve warm with your favourite toppings. My favourite are almond butter, coconut butter, rice malt syrup, coconut yoghurt, fermented berries or fresh berries, chia jam
