1. In a bowl whisk eggs, milk and oil until combined, In a separate bowl, mix coconut flour and baking powder. Add dry ingredients to wet ingredients and whisk until well combined and there are no lumps.
  2. Melt coconut oil in a frying pan and add spoonfuls of the mix to the pan. Cook for 3-4 minutes on each side over medium heat, then flip.
  3. Serve warm with your favourite toppings. My favourite are almond butter, coconut butter, rice malt syrup, coconut yoghurt, fermented berries or fresh berries, chia jam
