1. Preheat the oven to 180c and line a baking tray. Mix the desiccated coconut and spices together in a bowl.
  2. Set up a station of the chicken cut into cubes, the 3 eggs whisked and the desiccated coconut and spices mix. Dip each bit of chicken into the egg mix and then roll into the desiccated coconut and place on the baking tray. Repeat for all pieces of chicken. Spray with coconut oil and bake for 20-25 minutes or until golden!
  3. Serve with my homemade tomato sauce
