Coconut Chicken Nuggets

These coconut chicken nuggets are the bomb and are such a good swap for regular chicken nuggets. They are so crispy and golden on the outside, and the inside is so juicy and moist. (I hate that word, but I really gotta use it here – like the chicken stays SO SOFT!)
6-8 chicken thighs, cut into cubes
2 cups desiccated coconut
3 eggs, whisked
1 tsp Paprika
1 tsp garlic powder
Homemade Tomato Sauce to serve
- Preheat the oven to 180c and line a baking tray. Mix the desiccated coconut and spices together in a bowl.
- Set up a station of the chicken cut into cubes, the 3 eggs whisked and the desiccated coconut and spices mix. Dip each bit of chicken into the egg mix and then roll into the desiccated coconut and place on the baking tray. Repeat for all pieces of chicken. Spray with coconut oil and bake for 20-25 minutes or until golden!
