1. Cut the sweet potatoes, eggplants and zucchini into sticks or use a mandolin. Lay out the potato on a tray and spray with coconut oil. Sprinkle cinnamon over the sweet potato and cracked salt and pepper. Bake the sweet potato for 20 minutes, then add the eggplant and zucchini (spray with coconut oil and salt and pepper) and continue to cook for another 20-30 minutes
  2. While they are cooking, prepare your greens to steam. (but don’t steam yet!)
  3. Set up a station for your fish batter mix. Combine the ingredients on a plate and have an empty plate beside it. Roll each piece of fish into the batter and place it on the plate.
  4. Lay the pieces on a tray and spray with coconut oil and bake it in the oven for 15-20 minutes or until crispy or you can pan fry it in coconut oil for 4 minutes either side or until crispy.
  5. When the fish has 10 minutes to go, steam your greens in a double boiler.
